Amritsari Stuffed Paratha Masala
Stuffed Paratha
Variations – potato, paneer, mixed veg, radish, cauliflower, methi (fenugreek leaves), palak (spinach)
Ingredients
Basic recipe for paratha
- 2 cups wheat flour
- ½ tsp salt
- 1 tsp oil
Preparation
- Take the flour in a bowl, add salt and oil; mix well. Knead a soft dough by periodically sprinkling a little water to the flour. Cover and let the dough rest for 20 to 25 minutes.
- After allowing the dough to rest, grease your hands with some oil and knead the dough again.
- Take a small ball of dough and roll out a circle of 3 to 4 inches diameter. Place 2 tsp stuffing in the middle of the rolled paratha. Now, lift the rolled dough from all sides and seal the stuffing in the center.
- Dust with flour and flatten gently, ensuring that the centre doesn’t break open.
- Roll the dough to a paratha of about 5 to 6 inches diameter.
- Shallow fry on a tawa.
Stuffing Variations
Stuffed Chana Dal Paratha
Ingredients
- ¼ cup chana dal (par boiled)
- ½ tsp salt or as per taste
- 1 tbsp Zaiqa Paratha Masala
- Red chilly pwd as per taste
- 3 to 4 tbsp oil
Preparation
- Grind the dal coarsely without adding water. In a bowl, add salt , Zaiqa Paratha Masala, red chilli powder (if desired) and chopped coriander leaves to the ground dal.
- Mix well and use as stuffing.
Onion Stuffed Paratha
Ingredients
- ½ cup onions (boiled)
- Salt as per taste
- 1 tbsp Zaiqa Paratha Masala
- Coriander leaves (finely chopped)
- 1 Green chilli (chopped)
- Red chilly pwd as per taste
Preparation
Mix all ingredients and use as stuffing.
Paneer Stuffed Paratha
Ingredients
- ½ cup paneer (grated)
- Salt – as per taste
- 1 tbsp Zaiqa Paratha Masala
- Coriander leaves (finely chopped)
- 1 green chilli (chopped)
- Red chilly pwd as per taste
- 2-3 tbsp chopped onions
Preparation
- Mix all ingredients and use as stuffing.
Potato Stuffed Paratha
Ingredients
- 2 potatoes (boiled & grated)
- Salt as per taste
- 1 tbsp Zaiqa Paratha Masala
- Coriander leaves (finely chopped)
- 1 green chilli (chopped)
- Red chilly pwd as per taste
- 2-3 tbsp chopped onions
Preparation
Mix all ingredients and use as stuffing.
