Mumbai Style Frankie
For the rotis – combine ½ cup plain flour, ½ cup whole wheat flour, 1¼ tsp of oil and salt in a deep bowl and knead into a soft and pliable dough using enough water. Rest for 10 mins and roll out the rotis, cook on a tawa on both sides. Keep aside
Heat 1 tbsp oil, add 1 tsp ginger garlic paste and sauté for a minute. Add 200 gms boiled potatoes, 2 tbsps Zaiqa Frankie Masala and salt to taste; mix well and keep aside.
Paneer Stuffing – replace potatoes with small paneer chunks.
Chicken Stuffing – replace potatoes with small pieces of chicken.
Roll a Frankie – Toss the roti on a buttered tawa with or without egg, place little of potato stuffing, sprinkle chat masala or Zaiqa Magic Seasoning & chopped onions.
Cheese Frankie – sprinkle 2 tbsp of grated processed cheese over the stuffing and proceed as per the recipe.
Schezuan Frankie – simply smear 1tbsp of schezuan sauce, 1 tbsp tomato ketchup & 1 tbsp mayonaise evenly on the roti, top with stuffing and proceed as per the recipe.
Dips like Mint Chutney, Mint Mayo or Pickled Mayo (mix little mango pickle with mayo) are a great addition as the dips help to make the Frankie saucy. Just add a tbsp to the stuffing before rolling.
Heat 1 tbsp oil, add 1 tsp ginger garlic paste, sauté for a minute. Saute Tomato puree (1 cup) and sauté well. Add 200 gms boiled paneer/chicken/mix vegs, 2 tbsps Zaiqa Frankie Masala, salt to taste and mix well; Add 2 sliced onions and saute on high, add 1 tbsp tomato ketchup simmer for 2-3 mins. Use as stuffing for a roll.
