Roast and Dry Semi gravy dish from Madras, robust masala for restaurant style chukka (chicken fry) masala

Ingredients - Pepper, Red Chilli, Dhania, Haldi, Cumin, Fennel, Black Pepper, cumin, Mace, Stone Flower and Bay leaf


Chicken Chukka Varuval


  • 500 gms chicken pcs
  • 1 tsp ginger garlic paste
  • 1 tomato (ground)
  • 1/2 tsp each of fennel seeds and cumin
  • 2 Tbsp Zaiqa Madras Style Chukka Masala
  • 2 tsp garlic (chopped finely)
  • few curry leaves
  • 100 gms small onions or shallots
  • 6-7 whole fried cashews
  • 2 tbsp clarified ghee or gingelly oil
  • Salt to taste


  1. Marinate the chicken with little Zaiqa Chicken Chukka masala, ginger garlic paste & salt for 30 mins
  2. Heat Marinated chicken, add tomato pulp and cook on high for 10 mins
  3. In a pan, add ghee/oil, splutter fennel seeds, cumin, curry leaves, chopped garlic and onions toss well.
  4. Add cooked chicken pieces saute well for few mins
  5. Add Zaiqa Chukka Masala, Cashews and saute on high for 5 mins. Serve hot

Mutton Chukka – Pressure cook Mutton with Tomato, Turmeric, Salt, little Ginger Garlic paste. Follow process the from step 3 onwards.
