Madras Style Veg Kurma Masala
Ingredients
- 2 tbsp Vegetable Oil
- 2 tbsp Ghee
- Whole garam masala- 1 tsp Zeera, 1 Bay leaf & 1 pc kalpasi (stone flower)
- 2 medium sized Onion, finely chopped
- 2-3 green chillies
- 2 teaspoon ginger garlic paste
- 3 medium sized tomatoes, finely chopped
- 1/2 Cup Coconut Milk
- 2 teaspoon Zaiqa Madras Style Kurma Masala
- 4 sprigs Coriander leaves, chopped
- Few curry leaves
- Masala Paste- 5 cashew, 6 Whole Cashewnuts, 1 teaspoon White Poppy
Veggies - Mix of 1/2 cup chopped Potato, 1/2 cup chopped Beans, 1/2 cup Carrots, 1/2 cup Green Peas, 1/2 cup Chow Chow, 1/2 teaspoon Salt, 1/2 teaspoon Turmeric powder, 1 cup water
Procedure
1. Mix Zaiqa Madras Kurma Masala in the paste and keep aside.
2. Cook the veggies in a cup of water with the salt, ½ tsp Zaiqa
Kurma Masala and turmeric pd until firm but not mushy. Set aside.
3. Heat oil and ghee splutter whole garam masala. Add Onions and fry till translucent.
4. Add in the tomatoes, curry leaves and the ginger garlic paste. Fry
for 4-5 minutes Add masala paste. Add cooked vegetable mixture,
Salt to taste. Simmer for 5 – 7 mins.
5. Finally add coconut milk and leave it to come to a boil. Switch
off the flame and garnish with coriander leaves. Serve Hot with Parotta’s.
