Chicken Mandi (Arabian Rice)
Ingredients
Chicken Marination:
1. kg Chicken (4 pieces or whole)
1 tbsp ginger garlic paste 1 tbsp Lemon juice / Vinegar
1/4 tsp orange food colour
2 tbsp Zaiqa Mandi masala
Salt to taste
2- 4 tbsp butter (for frying)
Mandi Rice: 3 cups Basmati Rice 6 cups stock water or hot water with 1 chicken stock cube seasoning 4 tbsp Oil 1 large Onion (sliced) 2-3 bay leaves 3-4 green chilli (slit) 1-2 tbsp Mandi Masala (as per flavour liked by you) Pinch saffron dissolved in Water
Process
1. Marinate the chicken with Zaiqa Mandi masala, salt, food colour, lemon juice mix and marinate for 2 hours, saute on grill pan or cook in OTG for 20 mins till done. Keep aside (leftover marinade can be used for rice)
2. Mandi Rice – Heat oil, add bay leaf, fry onions till 2 -3 mins, add 1 tbsp ginger garlic paste, 2-3 green chilli (whole) 1 tbsp Mandi Masala saute well (leftover marinade can be added at this stage).
3. Add 6 cups hot water or chicken stock and add soaked basmati, cover and cook on dum for 15 mins. Finally pour dissolved saffron water in the end. Close and cook for 5 mins on sim flame.
Arabian Chutney
Grind 2 large tomatoes, 2 tbsp chopped fresh coriander, 1-2 garlic cloves, 2 green chillies, 1 tsp lemon juice & salt to taste. Blend well and serve along with Mandi Rice, grilled chicken in a platter.
