Pav Bhaji Masala
Recipe 1- Pav Bhaji
Ingredients
- 2 tbsp oil and 2 tbsp butter
- 10 gms garlic (ground)
- 3-4 green chillies (ground along with garlic)
- 2 medium sized onions (chopped),
- 3-4 tomatoes (chopped),
- 1 tbsp tomato paste (optional)
- Mixed vegetables (boiled potatoes - 3, boiled cauliflower - 1
cup, boiled peas - 1 cup) - 1 capsicum (finely chopped)
- 2-3 tsp Zaiqa Pav Bhaji Masala,
- 1 tsp red chilli powder
- 1 tsp lemon juice
- 1-2 tbsp butter
- Salt to taste
- Coriander for garnishing (finely chopped)
Preparation
1. Heat oil and butter and fry chopped onions; add zeera, ground paste of green chillies and garlic and fry
for a minute.
2. Add chopped tomatoes and sauté
for 5-7 mins. After the masala is cooked, add Zaiqa Pav Bhaji Masala, red chilli powder & salt. Cook further and add mashed boiled vegetables. Add capsicum and sauté well. Mash everything together with enough lukewarm water for gravy (max 2-3 cups). Simmer for 10 mins.
3. Add lemon juice, chopped coriander leaves and
1-2 tbsp butter for flavour.

Serve hot with buttered pav
(buns), lemon wedges and chopped onions.

2 - Paneer Tawa Pulao Recipe
- 2 cups cooked
Basmati rice - 1 onion (chopped)
- 2 cups mixed vegetables (cabbage – ½ cup, carrot - 1, capsicum - 1, green peas - ½ cup (par boil if frozen), potato
- 1) - 1 tomato
- chopped - 2 green chillies (slit)
- 1/2 tsp each of ginger and garlic (minced)
- Turmeric
powder - 1/2 tsp - Red chili powder - 1 tsp
- 1 tsp Zaiqa Pav Bhaji Masala
- Salt to taste
- 1 tbsp lemon juice
- 2 tbsp butter
- 100 gms paneer cubes (optional)
- Fresh coriander - for garnish
Preparation
- Heat butter and add minced ginger and garlic. Add chopped onions and green chillies and sauté well.
- Add tomatoes, mixed vegetables and all the spices. Fry everything for 5 mins. Adjust salt and add the cooked rice, lemon juice and mix all carefully to avoid rice from sticking or breaking. Incorporate well.
Add chopped coriander and fried paneer chunks to
the rice and give everything a quick toss. Serve hot with salad and onion raita.
